Saint Dining offers a fine dining experience unlike any in the area: a refined ambience perfectly married with an inspired menu to stimulate and tantalise all your senses.

Situated beneath the iconic Saint Hotel atrium, a moody materials palette of scorched timber, Nero Portoro marble, and buttery leather banquette seats present a sophisticated setting. A protein-focused, produce-driven menu, developed by Executive Chef Gary Lai, celebrates modern Australian cuisine at its finest, built around our hero of the kitchen: a Josper charcoal grill. With almost every element touched by the Josper, guests can choose from a selection of premium cuts and inventive desserts.
